I love Mexican food. I could eat it every day and never get tired of it. In college, for a quick snack (or sometimes an abbreviated lunch), I’d throw a tortilla in the microwave with some cheese and call it good. But then one day I figured out how to make fast, simple quesadillas on the stove top.
What You Need for Two Quesadillas:
- 2 tortillas
- 1/4 cup grated cheese
- Cooking spray
- Chopped onions (optional)
- Cooked rice (optional)
- Beans (optional)
- Chicken or ground beef (optional)
- 2 Mama Lupe’s Low Carb Tortillas = 120 calories
- 1/4 cup grated Kroger cheddar cheese = 110 calories
- Cooking spray = 0 calories
Total calories for two cheese quesadillas = 230 calories.
Served with salsa, it’s probably a total of 250 calories.
You can also add onions or rice or beans or meat. Whatever sounds good to you will work. The sky is the limit.
You can use regular flour tortillas, but we usually only have the low-carb tortillas in the house. And they work just fine.
Put a skillet on medium heat and let it warm up a little. Spray it with the cooking spray and toss the tortilla on it. Spray the side of the tortilla facing up and flip it.
Put the cheese on one half of the tortilla. You can measure if you like, but I usually eyeball it. And you can use any kind of cheese. I normally use cheddar because that’s what we have. But I have also tried mozzarella, and it’s tasty too.
Fold the tortilla in half and let it brown on one side. It usually takes less than five minutes, depending on how hot you let the skillet get.
Flip it over and let it brown on the opposite side.
Remove from heat and serve with salsa. Some folks like sour cream too.

You can knock out a whole plateful in fifteen minutes or so.
Keep in mind that the longer the skillet is on, the faster they will cook. So the more you make, the faster they’ll brown. So just keep an eye on them.
